Recipe: Carrot-muffins!



You will need:

About 10 stk.
Muffins:
3 dl of wheat flour
1 dl of brown sugar
a pinch of salt
1 teaspoon of ground ginger
2 teaspoons of cinnamon
1 ½ teaspoon af baking powder
2 eggs
100 g coarsely grated carrot
100 g of a neautral taste oil - example: sunflower oil or grapeseed oil
1 dl milk

Topping:
200 g cream cheese
100 g soft butter
2 dl icing sugar


Step 1:
Put wheat flour, brown sugar, salt, ground ginger, cinnamon and baking powder in a bowl and mix it

Step 2:
Add the 2 eggs, the carrots, oil and milk and mix it all together to a dough without clumps.

Step 3:
Put the dough in the muffin cups and bake them in the oven at 200 degrees celcius in about 17 minutes

Step 4:
Whip the cream cheese, butter and icing sugar together and put it on the cooled muffins. You can decorate the muffins as you want to.



















I baked these (or my lovely mother did because I had hurted my colar bone and arm) for my birthday brunch I had last weekend, and they tasted sooo good. But with and without the topping. And they are easy to make, and I will for sure make these again some other time.
