In my "Back to school" blogpost I did, I said that Sunday was my "Me time day" where I do the things that I love doing. In a "Sunday Series" that will be the next three sundays, I will show you what I do the first of the day sunday - my favorite day of the week.

The last part of my sunday routine is the food. When I've finished the run, workout and the bath, it is time for lunch. The picture above it a good example of what I would eat; ryebread with mashed avocado, salmon and salt. Besides that I have a crispbread (I've a recipe for a homemade one HERE) and some grapes. There is nothing special about how I make that, so instead I will leave the photo as an inspiration instead. What I will do instead, is leave a recipe for some cookies. As I said in the Sunday routine from last week, is that the rest of the sunday I would like to use on something I like to do; and I like to bake! So after I finish lunch I could bake this:
Peanutbutter cookies
You will need:
225 g butter
200 g icing sugar
200 g brown sugar
2 eggs
1/2 teaspoon of vanilla extract
250 g of crunchy peanutbutter
350 g wheat flour
2 1/2 soda
1/2 teaspoon salt
75 g of dark chocolate
How to:
1. Whip butter, icing sugar and brown sugar untill it's "fluffy"
2. Add one egg at a time and blend it all good
3. On a low speed you whip the vanilla and peanut butter into the mixture
4. Add flour, soda, salt and mix till it is a dough
5. Cut the chocolate into small pieces and add it.
6. Put them on a bakingpan, they get quite big so don't put them too close.
7. Bake them in the oven at 170 degrees celcius in 10 minutes or until they are golden brown.
