Lime cake recipe!


I had a lot of limes laying around my kitchen, and what do you do when life gives you limes? You bake a cake!
This cake is fresh and gives you a little "wake up" without being too sour or too sweet - it's the perfect combination of sweet and sour that gives a perfect lightness for the summer heat.
The summer heat we have been feeling a lot in Denmark lately, so when I served this for my family and our friends that were coming over, they loved it! You should try it out too!


Ingridients:


The cake:
250 g of flour
125g butter
1 teaspoon og vanilla powder
4 eggs
200 g sugar
Scratch the skin of 2 limes
2 1/2 teaspoons of baking powder
1 dl milk
100 g white chocolate
50 g coarsely chopped hazelnuts


Lime pickle:
The juice of 2 limes
50 sugar

Topping:
200 g cream cheese
50 icing sugar
The juice and scratch the skin of 1 lime


How to:


1. Melt the butter and let it cool
2. Whip eggs, sugar and vanillia powder. Blend the sugar and the scratched lime skin into the mixture.
3. Mix flour and baking powder. Mix it into the doug while shifting between the flour mixture and the milk. Chop the chocolate and the nuts un blend it with the rest of the dough and put it into a baking form.
4. Bake the cake in 40-45 minutes on 180 degrees celcious
5. While the cake bakes you can heat the ingridients for the Lime Pickle in a stove.
6. Let the cake cool 10 minutes before you put the Lime Pickle on top.
7. Blend all the indgiridents for the topping. When the cake has cooled completly you can put it on top.
8. Enjoy!!
